As a healthy living blogger, I love finding really unique ingredients and recipes. The two that I think are the most known are dark chocolate avocado mousse and spaghetti squash. I have already completed and loved my experiment with the dark chocolate avocado mousse. Now it is time to take on spaghetti squash.
I’ll admit, I’ve always been very skeptical. How can you replace something so hearty and starchy with something thats… well not.
I was always afraid that it would taste like what it sounds like. Stringy squash. Definitely not appealing sounding in my book.
I must say I was pleasantly surprised. Even though it is obvious that it’s not regular spaghetti, I definitely wouldn’t pass up on it if it was served to me. Plus it is really good for you. Win win right?
If you’re looking for a topping, check out my super quick, lazy marinara sauce. It really can’t get any easier for when you really just don’t feel like making dinner.
Preheat your oven to 350F
Cut your squash in half
Place on lined baking pan
Bake for 45 minutes or until a fork goes through pretty easily
Allow to cool for a little bit. Scoop out the seeds.
Using the same fork you tested the squash with, scrape the insides so they come out as strands
Pour the strands into a bowl
Top with homemade marinara sauce and enjoy!
